Mexican Corn Cake

Anytime we go to a Mexican restaurant my husband would always order extra corn cake. It usually comes in the form of a little yellow ball shaped scoop they put on your plate that tastes sweet and yummy.

Well thanks to his sister, we can have all the corn cake we want! It is so simple to make too, just like the restaurants! Only 4 ingredients! We make it anytime we are craving Mexican food. It is a great recipe for the little ones to help make too.

What you need:

One package of corn muffin mix
One can of cream corn
One can of whole kernel corn with the liquid (not drained)
1/2 a cup (or one stick) of melted butter

What you do:
Mix all four ingredients together until well blended spread in a greased 9 by 13 glass baking dish.

Bake 350 degrees for 30 minutes or until mixture starts to slightly pull away from the edges of the dish. It will still be very soft.

Serve:
Use a spoon to scoop it out, it is not formed like a cake. You can also use a melon baller, or cookie dough scoop if you want to make it look like the corn cake in Mexican restaurants.


Great side dish for potlucks too! So yummy!

  1. We used to eat this all the time when I was a kid. I still love it, especially with beef stew or chili! It's really great with savory stews! =)
